Clary sage is a perennial condiment and ornamental plant very honey-rich with white flowers tinged with purplish blue. It is used like sage officinalis but it is preferable to use the clary with the officinalis in long cures. In popular medicine, the leaves are used to heal wounds. It has been cultivated since ancient times for its medicinal properties. However, you have to wait until the 2nd year to see it bloom and see the carpenter bees and the gassed sphinxes who adore it gorge themselves with nectar.

Beautiful perennial, aromatic and medicinal plant with a bushy habit. Hyssop is used in the composition of the famous ''Herbes de Provence''. Its small shiny green leaves can be used fresh or dried as a condiment. The ideal way to keep them dried is to cut them before flowering. Its delicate flowers form beautiful deep blue spikes which can also be eaten fresh in a salad, or as an infusion. It is used in herbal tea, fresh or dried. The leaves, stems and flowers are the parts used. Lemon balm is a plant known since ancient Greece and used for its benefits against stress, insomnia and overwork. It is known to have antispasmodic, antiviral, digestive properties and effectiveness against anxiety.;Caution Lemon balm seeds require cold and moist stratification before being sown.

Cut the flowers before they produce seed. This will prevent seed dispersal. Lemon balm can become invasive by spontaneous sowing. Sow indoors at the end of March. This plant requires cold stratification in moist sand at least 2 weeks before sowing.

Purple Shiso (Perilla frutescens)

Note: Shiso seeds can be challenging to germinate. Performing a brief stratification followed by soaking the seeds for 24 hours before sowing will greatly aid in the process. Refer to the document "The Key to Germination: STRATIFICATION" in the Blog menu for more information on this topic.
