How to Grow Crosnes in Quebec

Crosnes (Stachys affinis), also known as Chinese artichokes, are hardy and delicious tubers that are gaining popularity in Quebec. Their cultivation is relatively simple, here is a complete guide to successfully growing them in your garden.

Why Grow Crosnes in Quebec?

Crosnes are well-suited to temperate climates and withstand Quebec's cold winters. They offer several advantages:

  • Hardy and easy to grow : Resistant to diseases and pests.

  • Unique taste: Their mild flavor is reminiscent of artichoke and hazelnut.

  • Sustainable production: They are perennials that can naturalize.

When and How to Plant Crosnes?

Planting Period

Crosnes should be planted in the spring, as soon as the soil is workable (April-May), or in the fall (September-October) for better establishment before winter.

Soil Preparation

  • Choose a well -drained, loose, and organic-rich soil.

  • Work the soil to about 20 cm deep to facilitate tuber development.

  • Add compost to enrich the soil with nutrients.

Planting the Tubers

  • Bury the tubers 5 cm deep spacing them 30 cm apart.

  • You can also start seeds indoors around April and transplant them into the soil in May. Water regularly to maintain consistent moisture, especially during the growth period. However, once established, crosnes require minimal maintenance.

  • Mulch the soil to retain moisture and limit weed growth.

 Care and Growth of Crosnes

  • Watering : Moderate but regular, avoiding excess to prevent rot.

  • Weeding: Mulching will reduce competition from weeds.

  • Fertilization : Adding compost during the season promotes good growth.

Harvesting and Storage

Crosnes are harvested in October-November, after the first frost, when the foliage turns yellow. The tubers develop with the cold, so if you harvest too early, they will be small. Use a fork to dig up the tubers without damaging them. Store them in moist sand in a cool place or in the refrigerator for better preservation. Leave one or two crosnes in the ground for regrowth, as they overwinter very well in the soil.
