This Bok-Choy is tiny, but how tasty! Its short, but wide white stems end in a dark green spatulate blade. Its many leaves form a very dense foot of flared shape. Excellent in stir-fries! It grows easily and does not fear the cold. Also, it takes up very little space in the vegetable garden. The name of this edible perennial comes from the old French, rais fors meaning “strong root” in reference to the pungent but fine taste of its vigorous taproot. It was formerly called “poor man’s pepper”. Grated horseradish root is used as a condiment, as a substitute for mustard.

Envelope: 4 to 5 root splints (depending on size) to keep in the fridge moist until planting.

MAINTENANCE AND OTHER CONSIDERATIONS
Keep the cuttings in the fridge until planting, and make sure they stay moist. Plant the roots by laying them down, either as seeds in April, or directly in the garden at the end of May. It is better to wait until the second year of cultivation to start harvesting, then between September and April. Pull out the roots with a strong spade; there will always be a fragment left in the soil to start again in the spring.

This vegetable loves the cold. Lamb's lettuce is actually sown very early in the spring, or at the end of the summer in a soil enriched with compost. Reine des glaces lettuce is a bicentennial variety originating in France and often sold under the names Ice Queen and Queen of Ices in North America; Queen of the Ices in the UK; and Regina delle Ghiacciole in Italy. It is a batavia lettuce; its leaves are toothed, wavy, crunchy and have a sweet taste. This variety grows quickly and tolerates heat well; it does not develop a bitter taste and does not bolt easily. It also tolerates the first snowfalls well, which makes it very versatile. After the first harvest as an apple, you can continue to cut the fresh leaves.

Turkish rocket can be recognized by its yellow flowers and deeply incised leaves. This perennial is easy to grow, hardy, edible and very melliferous which makes it an excellent choice for your permaculture projects. These elongated pear-shaped flower buds have a taste similar to rapini. It is particularly appreciated for its young leaves, which taste like cabbage. They can also be cooked just like spinach.

Do not sow after July. It will not have time to produce flowers before the end of the season. After flowering it will reseed spontaneously and will grow back the following year. It is a follower of spontaneous sowing.

A variety from Japan, the Sapporo express cultivar is early and productive. This shelling pea is sweet and crispy. Little information on it, but it is rare and delicious, two good reasons to plant it in the vegetable garden and reproduce it!
